Yogi tea - Rooibos African Spice

My favorite tea is "Rooibos African Spice" frome Yogi tea. It's organic, it's spicy and it goes perfectly with dark chocolate, like one of Green & Black's delicious organic chocolates.

Ingredients: Rooibush/rooibos* (70%), cinnamon*, ginger*, carob*, roasted chicory*, cardamom*, cloves*, cinnamon extract (natural flavour), black pepper*, ginger oil*, cardamom oil*, vanilla extract (natural flavour)*. * = certified organically grown.

Rooibos tea is made from a South-African bush that only grows in an area north of Cape Town. The tea doesn't contain caffein and it has a lot of natural antioxidants and minerals. Rooibos tea has a relaxing effect and is therefore perfect to drink in the evening.

In addition to the health benefits and the lovely taste, it has inspiring quotes attached :)

Klättermusen - "Maximum safety for you - minimum impact on nature"

I've been on the search for a new jacket for a while, and was happy when I recently discovered Klättermusen, a Swedish company that produces outdoor clothing and equipment with principles of sustainability in mind. Klättermusen allocates one percent of sales to environmental projects and they use recycled materials in some of their equipment and clothing, like the back pack Gnå, for which they were awarded with Ispo's "ECO Responsibility Award".

They also produce some clothing made of densly woven (etaproof) organic cotton and use fluorocarbon-free weather proofing. Here you can read more about one of their jackets in organic etaproof cotton.

They used to have the statement "Don't buy a jacket if you don't need one" on their web pages. This is probably the most eco-friendly advice you can get from a company that manufactures clothing, and I really hope they put it back on their web page. It was one of the things that made me want to buy a Klättermusen jacket when I needed a new jacket.

Oven baked codfish in cream and tomato sauce

400 grams of Codfish fillets
1 tin chopped tomatoes (about 400 grams)
2 tablespoons olive oil
1/2 chopped leek
1 chopped shallot
4 tablespoons fresh basil (or 2 tablespoons dried basil)
salt and pepper

Sause:
2 dl cream
1 tablespoons mustard (preferably with mustard seeds)
2 cloves of garlic
1 cube of stock
2 tablespoons chopped parsley

Preheat the oven to 200 °C. Put the fish in an oven proof dish (I recommend that you put a little bit of oil in the bottom of the dish before you put the fish in). Blend all the ingredients for the sause in a casserole and make it boil before you pour it over the fish. Place the oven rack in the lowest position and let it bake in the oven for 15-20 min.

Blend olive oil and chopped tomatoes. Put in leek, shallot and basil. Put the blend on top of the fish, and continue baking in the oven for 15 minutes.

Serve with boiled potatoes or rice, and perhaps a salad.

Enjoy!

Red lentil soup

This is student friendly food - it tastes good, is healthy, easy to make and doesn't cost much either :)

Lentils and other legumes are rich in proteins and fibers. You can use them in soups, salads and as a side dish. Red lentil soup is one of my favorite lentil recipes:

- 250 grams red lentils
- 1 liter water with vegetable stocking
- 1 tin chopped tomatoes (400 grams)
- 1 onion

Rinse the lentils in water. Chop the onion and warm it with some rapeseed oil in a casserole before adding the rest of the ingredients. Then add the rest of the ingredients and let it boil for 20 minutes.
You can also successfully add a number of other ingredients, like garlic, celery or different herbs and spices.

The soup tastes delicious with garlic bread.
