Oven baked codfish in cream and tomato sauce

400 grams of Codfish fillets
1 tin chopped tomatoes (about 400 grams)
2 tablespoons olive oil
1/2 chopped leek
1 chopped shallot
4 tablespoons fresh basil (or 2 tablespoons dried basil)
salt and pepper

Sause:
2 dl cream
1 tablespoons mustard (preferably with mustard seeds)
2 cloves of garlic
1 cube of stock
2 tablespoons chopped parsley

Preheat the oven to 200 °C. Put the fish in an oven proof dish (I recommend that you put a little bit of oil in the bottom of the dish before you put the fish in). Blend all the ingredients for the sause in a casserole and make it boil before you pour it over the fish. Place the oven rack in the lowest position and let it bake in the oven for 15-20 min.

Blend olive oil and chopped tomatoes. Put in leek, shallot and basil. Put the blend on top of the fish, and continue baking in the oven for 15 minutes.

Serve with boiled potatoes or rice, and perhaps a salad.

Red lentil soup

This is student friendly food - it tastes good, is healthy, easy to make and doesn't cost much either :)

Lentils and other legumes are rich in proteins and fibers. You can use them in soups, salads and as a side dish. Red lentil soup is one of my favorite lentil recipes:

- 250 grams red lentils
- 1 liter water with vegetable stocking
- 1 tin chopped tomatoes (400 grams)
- 1 onion

Rinse the lentils in water. Chop the onion and warm it with some rapeseed oil in a casserole before adding the rest of the ingredients. Then add the rest of the ingredients and let it boil for 20 minutes.
You can also successfully add a number of other ingredients, like garlic, celery or different herbs and spices.

The soup tastes delicious with garlic bread.
